Finding allergen-friendly valentines treats that aren’t just pure sugar is tricky business. Making allergen-friendly valentines treats is not so tricky…and WAY healthier. Blended with a ripe banana and some coconut butter, these strawberry filled bon-bons are just right for satisfying a sweet tooth. heavenly carrot cake muffins.

carrot cake muffinsFair warning: I’m about to get all overly-emphatic-blogger-chick on you. You know the type that gush on and on about how A-MAZ-ING every single thing they ever make tastes? The type that knows all about grammar and proper word usage but somehow loses all desire to care if the sentence is written correctly because, yum. Forgive me? Because, yum.

But seriously. These carrot cake muffins. Heavenly may be a bit of a stretch, but I cannot even begin to tell you how wonderful they are. You just have to taste the perfection yourself. It’s a good thing they are healthy because I could have eaten every single one of them. It was love at first bite. 💕 Sigh… It really is unfortunate that “healthy” doesn’t equate to “calorie-free” isn’t it? But I digress… Continue reading

Spiced Banana Smoothie

A spiced banana smoothie is one of my favorite rehydrating, energizing drinks. It’s great after a workout, after or during a dehydrating illness, or if you’re just feeling a little sluggish. It’s so simple that I feel a little silly sharing a “recipe,” but I will anyway! Read more about the benefits of bananas here. Continue reading

Yesterday we celebrated a birthday. As I cleaned up what seemed like the aftermath of a hurricane, I found myself full of gratitude for opportunities to celebrate. Our lives are made up of moments and many of the moments seem mundane, but the beauty of the moments added together makes a life – and life is worth celebrating. So the day after a party, I baked a cake for another special occasion: It’s Monday. We’re all here together. Life is good. Continue reading

Chocolate Pumpkin Spice Cake

Once upon a time, I found a recipe for two-ingredient vegan marshmallow cream on Pinterest. The two ingredients? The liquid drained from a can of garbanzo beans and a liquid sweetener of choice. Intriguing…or weird? If nothing else, it sounded like an interesting science experiment for the boys. Could those two ingredients really turn into a fluffy topping with just a few minutes of whipping? Inquiring minds need to know. Continue reading

perfect vegan gluten free nut free chocolate chip cookies.

vegan gluten free nut free chocolate chip cookies

I’ve been doing some really important research around here. Life changing. Important stuff. And you, lucky readers, are about to be the first to enjoy the fruits of my self-sacrificing labor (that is of course if you first do some labor of your own…or live close enough to swing by for a cookie…). I have recently made numerous batches of chocolate chip cookies in an effort to discover the recipe for perfect vegan gluten free nut free chocolate chip cookies. I know, it was hard, but somebody had to do it. How could a household with 4 boys and a mommy that loves chocolate really survive without them?

healthy chewy oatmeal raisin cookies

When it comes to sweet treats I have this little problem. A problem otherwise known as no-self-control. Well, really it’s more like the lack of desire to control myself. I could control myself if I wanted to… ;). Whatever the case may be, it is the reason I rarely make cookies or any other such easy-to-eat-entirely-too-yummy food. Somehow if I make a batch of cookies they seem to magically make their way into my mouth until they are all gone – much to the dismay of my boys whose self-control is still subject to mommy-control. I suppose it really isn’t fair that they get just one cookie after dinner and I get 30 after they go to bed… Continue reading

how to live a plant-based life.

life.unlabeled. 6-week challenge

I am so excited to share this with you today! (Even if it’s l–o–n–g after I’d hoped to share it!) I am the organized planning type, so making meal plans, schedules, and lists is just part of my world. I used to think sometimes that I was wasting my time and I should just go with the flow, but then one day I realized that the work I do to plan for my own family could really help someone else who would like to learn a new way of eating well without the headache of figuring it all out. So alas, my efforts aren’t in vain!

Trying your hand at a whole-foods, plant-based lifestyle has never been so simple. Change is never easy, but I have taken the guess work and planning out of the equation for you to help you get started. You CAN learn how to live a plant-based life. Using the recipes and information in the life.unlabeled. 6-week challenge, all that’s left for you is to follow instructions to learn what to buy and how to prepare delicious and satisfying food to fuel your healthy life. After 6 weeks, you should have a good idea of what you like, what you don’t, and how to bring it all together. At first, every day may feel like a new culinary adventure, but after you’ve made it through 6 weeks, you’ll have new “regulars” that you are comfortable preparing quickly and easily and you can start to add new dishes to your repertoire as your time and creativity allow. One easy way to include a serving or two of fruit in your day is with a quick smoothie. If you’ve got a decent blender and some frozen fruit, it takes only minutes to put something together.  For my family, the secret ingredient for a winning smoothie is pineapple.  With equal parts pineapple to other fruits, I can pretty much get away with any combination of fruits (and an occasional handful of spinach!) without adding any sweeteners or dairy substitutes.  Our favorite combination is blueberries, strawberries, and pineapple.  Give it a try.  Let me know what you think and share your favorites below! chocolate banana strawberry parfait.

The first time I made this for breakfast, my boys were just sure I was crazy.  Chocolate pudding for breakfast?  Awesome!  But of course I wouldn’t give them just any pudding for breakfast.  No dairy.  No added sweeteners, preservatives, or other chemical “enhancements.”  Just fresh fruit and cocoa.  Rich in antioxidants.  Delicious.  Top with easy homemade granola or eat it as is.  Makes a great breakfast or dessert.
