Waffles are a favorite breakfast food in our house. They’re quick, easy, and covered in sweet, sticky, maple syrup – what’s not to like? Pumpkin spice waffles are dense, hearty waffles that pack a nutritional punch and never leave us hungry for lunch before it’s time. Using fresh pumpkin, the flavor of pumpkin is very subtle. If you only have canned pumpkin to work with, your waffles will likely have a more pronounced pumpkin flavor.

If your mornings are rushed, mix up the dry ingredients the night before so all you have to do is add the wet ingredients and cook them in the morning.

Be sure to use 100% pure maple syrup. Pouring corn syrup all over your breakfast is not a recommended way to start the day. 😉

  • 1 cup brown rice flour
  • 1 cup oat flour
  • 1 cup millet flour
  • 1 cup unsweetened shredded coconut
  • ⅓ cup regular rolled oats
  • 1 ½ tbsp. baking powder
  • ¾ tsp. sea salt
  • 1 ½ tsp. cinnamon
  • ¼ tsp. ginger
  • ¼ tsp. nutmeg
  • ¼ tsp. ground cloves
  • 1 ½ tsp. xanthan gum
  • 3 tbsp. flax seed meal
  • 2 tsp. vanilla
  • 2 cups pumpkin puree
  • 2 ½ cups water
Instructions
  1. Combine dry ingredients. Add wet ingredients. Cook on waffle iron as usual.
