According to The Physician’s Committee for Responsible Medicine, “scientific research shows that health benefits increase as the amount of food from animal sources in the diet decreases, so vegan diets are the healthiest overall.” I have seen time and time again in my own personal studies of nutrition, studying the research of proponents of plant-based as well as traditional nutrition, that the answer to better health is in eating more whole-food, plant-based foods. Benefits include cancer prevention, reversal of heart disease, lowering blood pressure, preventing and reversing diabetes, and lowering risk for osteoporosis. An impressive resume. But research is one thing; experience is another.
If you’ve read my story, you know I’ve been a vegetarian almost my entire life, but it was only in the last 5 years that I began to discover the clarity, power, and energy I had when I also cut out animal-derived foods such as dairy and eggs. In the last few years, I’ve also been blessed to coach others through the transition to a whole-foods, plant-based lifestyle and have seen them experience amazing results. When we got back we wanted to fast for a couple of days because we felt so weighed down and gross. After a week of getting back to our way of eating we felt better. Rod. I’m a 64 year old farm boy, raised on meat, milk, butter, cheese and eggs. This was usually followed up with some kind of desert two meals a day which frequently included ice-cream! Two years ago I would have told you you were crazy if you had tried to convince me I could live without these tasty animal products.
Thanks to my over indulgence in the above mentioned animal fats, I spent most of my life being what I considered overweight, even though it was a life of hard work. From age 21 to 62 I was continually watching what I ate and never ate to satisfaction or I would just gain more. In the animal world I was what we call an ‘easy-keeper’. These eating habits led to my system building up excessive cholesterol and having to have two stints put in my heart two years ago.
What an eye opener! With my wife’s help and some research it seemed the best avenue to good health was through my stomach, so I decided to quit putting things in there that would harm me. Thus, the vegan diet, which has led to a stable weight of 160 pounds on a 5’ 10” frame and for the first time in my life I can eat to satisfaction without feeling guilty or gaining weight. Another surprise is how good the foods taste and how vegetables, fruits, nuts and grains can be mixed and matched to come up with a never ending variety of great meals. Another little serendipity is that prep does take time, but my wife and I have found that we quite enjoy working in the kitchen together. Oh, and by the way, my blood numbers two months ago were “perfect” according to my doctor. I only take 10 milligrams of statin three times a week as a precaution. The doctor attributes most of the good numbers to my diet.
Elaine. I started the vegan lifestyle a year ago this past August. I am so glad that I did. It has made such a difference in the way I feel and not to mention the weight loss of 15 pounds I had been trying to shed FOREVER. I love the recipes in the book and they are very easy to prepare once you gather what items you need. I was just going to try it for 6 weeks and now I am hooked on the vegan style. I would encourage anyone out there to give it a try. You will be glad you did. If a 60 year old can do it so can you!
